One of my favorite parts of that ritual is the cucumber-and-cream-cheese tea sandwich. It is a true classic. Crisp, cool, and elegant without ever trying too hard. Cucumber and Cream Cheese Tea Sandwiches

Ingredients

1 loaf thin-sliced white or wheat bread

8 oz cream cheese, softened

2 Tbsp fresh dill, chopped

1 English cucumber, thinly sliced

Salt and pepper to taste


Instructions

  • Mix the cream cheese and fresh dill together until smooth and well blended.
  • Spread an even layer of the cream cheese mixture onto each slice of bread.
  • Layer thin slices of cucumber over the cream cheese.
  • Sprinkle lightly with salt and pepper.
  • Trim away the crusts and cut into triangles or slender finger sandwiches.


Serve on a tiered tray if you have one, perhaps lined with lace paper, and pour a favorite herbal tea alongside. The beauty of this sandwich is its simplicity. It is light enough not to spoil your appetite, yet satisfying in its cool freshness.
