A Morning at the Inn: Fresh Berry Waffles with Blueberry Syrup & Crème Fraîche

Most guests are still asleep when the kitchen comes to life.


The kitchen catches the early aroma of first-brewed coffee. The inn wakes up slowly, and breakfast is how it begins.


One summer, not long after we arrived in Westbrook, the blueberries at Chester Farm were exceptional. We came home with more than we planned for, baskets overflowing with yummy berries. So we cooked.


These waffles came out of that morning. The syrup simmers on the stove while the waffles cook. Guests started asking for the recipe before they finished eating. That was years ago. The recipe hasn't changed.


Thomas, a young man who worked with us for many seasons, said it best over breakfast one morning: "Crème fraîche is the glue that holds the Inn together." He was right. We still serve it the same way.


Here is what you need and how to make it.

What You'll Need

For the waffles:

  • 2 cups flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1¾ cups milk
  • ½ cup melted butter


For the blueberry syrup:

  • 2 cups blueberries
  • ½ cup sugar
  • ¼ cup water
  • 1 tsp lemon juice

How to Make It

Combine your dry ingredients in one bowl. Whisk the eggs, milk, and melted butter in another. Bring them together until just combined. Don't overwork it. Cook in a hot waffle iron until golden and crisp at the edges.


While the waffles cook, add your syrup ingredients to a small saucepan over medium heat. Simmer for about 10 minutes, stirring occasionally, until the berries break down and the syrup thickens just slightly. It will smell like summer.


Serve the waffles warm, topped with fresh berries, a generous pour of syrup, and a cool spoonful of crème fraîche. That contrast of warm waffle, jammy syrup, and a cold tang of the crème fraîche is the whole point.


It's a good breakfast. But at the inn, it's also a feeling. One we hope you come back for.
