A SWEET WELCOME AT THE WESTBROOK INN

One of my favorite parts of welcoming guests to the Westbrook Inn is baking chocolate chip cookies. There is something about that familiar smell that instantly makes the inn feel warm and inviting.


After a long day of travel or exploring the Connecticut shoreline, a simple cookie can make all the difference. I love setting out a small plate in the parlor for late arrivals. A cookie and a cup of tea often turn into a quiet moment to relax and settle in. Chocolate chip cookies have always been my way of sharing a little love, and I hope that comes through with every batch. Guests often come back for seconds, which I take as the best compliment.

Meri’s Classic Chocolate Chip Cookies

Ingredients

  • 1 cup butter, softened
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 ¼ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups chocolate chips

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment.
  • Cream butter and sugars until light and fluffy.
  • Add eggs and vanilla.
  • Mix in flour, baking soda, and salt, then stir in chocolate chips.
  • Scoop and bake for 9 to 11 minutes until lightly golden.


If you want to elevate them just a bit, sprinkle a few sea salt flakes on top before baking or add a touch more vanilla.
