Our Baked Berry Pancake

Most guests never guess how simple it is. They just see a golden, fluffy, fruit-speckled pancake being pulled warm from the oven and assume we’ve been whisking, flipping, and fussing for an hour. But that’s the beauty of it. Instead of standing over a griddle, we pour one big batch into a pan, scatter fresh berries across the top, and let the oven do the work while we welcome guests and prepare the rest of breakfast.

The Recipe: Baked Pancakes with Fresh Berries
Ingredients
- 3 cups butter milk pancake mix (Krusteez preferred or homemade)
- 2 cups milk or water
- 1 eggs
- 1 tsp vanilla
- 1 cup fresh mixed berries
Instructions
- Preheat the oven to 425°F and spray a full sheet pan.
- Mix the pancake batter with milk, eggs, and vanilla.
- Pour into the pan and sprinkle berries on top.
- Bake for 12 - 15 minutes, or until golden and set. (top will not brown but you can put under broiler for a minute or two to brown)
- Slice into squares and serve warm.
